I love chocolate!
I am a major chocaholic and being on this healthy eating plan is seriously hard on me! Thankfully, I have found some chocolatey goodness that I can have to beat the cravings, and is high in protein too!
First up is Peanut Butter Cups!
I love Reese’s Peanut Butter Cups. I have only recently discovered them and they are delish! I love them, and Ben and Jerry’s Peanut Butter Cup ice-cream!
When I discovered this recipe I was super excited to try it out – and so pleased to find that I had all the ingredients at home already to make them!
What you’ll need:
- A blender or food processor
- Measuring Cups
- Silicone moulds
- Protein Whey (1 scoop)
- Peanut butter (1tbsp)
- Cocoa powder (1tbsp)
- Liquid egg whites (pasteurized) (1cup)
- Add the liquid egg whites, cocoa powder, whey protein and peanut butter in to a blender or food processor.
- Whizz up until all ingredients have mixed and smooth.
- Pour in to silicone mould.
- Pop in the freezer until set (approx 1-2hrs).
I would recommend putting the silicone mould on to a baking tray, or if you are using individual silicone cupcake moulds, insert them in to a cupcake tray. This will make sure that they stay in position and don’t tip out when going in to the freezer.
They taste pretty similar to the normal peanut butter cups you can get. Because they are frozen, they have that ‘ice lolly’ texture to them and not so much of a crunch – but that’s ok.
So there you have it! High protein sweet stuff to tackle those cravings – just don’t eat them all at once!
